Sweet & Spicy Pork Tenderloin

Lean pork tenderloin (1-1/2 to 2 lbs).
Screamin' Mimi's Sweet Hot or Sweet Hotter Salsa Salt and Pepper
What To Do:
Make a cut down the center length of the tenderloin. Cut slightly deeper than halfway through the tenderloin. In the open cut, add 4 or 5 spoons of Screamin' Mimi's Sweet Hot or Sweet Hotter Salsa. Reshape and toothpick or tie several places along the cut. Brush the top of the tenderloin with additional salsa. Bake at 350 degrees for 40 - 45 minutes or until internal temperature reaches 170 degrees. Slice tenderloin into servings 1-1/2 inches thick and serve.

Meatloaf with a Motor

1-1/4 lb. Lean ground beef or ground turkey
6-8 saltine crackers, crumbled
1 egg
9 oz. Screamin' Mimi's Sweet Hotter Salsa Garlic Salt and Pepper to taste
What To Do:
Crumble crackers and mix all ingredients well. Mold into a meatloaf shape and place in a greased pan. Brush top of loaf with remaining salsa and bake at 350 degrees until done—about 1 hour.

Spiced Grilled Shrimp

1 lb. Fresh or fresh frozen shrimp (24 count)
4 Tbsp. butter
4 Tbsp. Screamin' Mimi's Pepper Sauce
4 Tbsp. Screamin' Mimi's Wine & Pepper Sauce wooden skewers
What To Do:
Melt butter in a sauce pan. Mix butter, Pepper Sauce and Wine & Pepper Sauce. Peel, devein shrimp and put on skewers. Generously brush both sides of the shrimp with sauce mixture. Chill shrimp in refrigerator 1 - 2 hours. When ready, place skewered shrimp on a grill over medium heat, 2-4 minutes per side or until shrimp redden. While grilling, brush shrimp with remaining sauce. Serve.

Burrito Roll-Ups

8 oz. cream cheese
7 oz. can of chopped green chilies
1 can of sliced or chopped black olives
4 chopped green onions with ends
2 Tbsp. Pimento
What To Do:
Mix all ingredients together. Spread, or butter mixture on large burritos. Roll up burritos and wrap in plastic wrap. Refrigerate rolls for 2 - 3 hours. When ready to serve, unwrap rolls and slice in sections. Serve cold, topped with Screamin' Mimi's Sweet Hot or Sweet Hotter Salsa. Note: For a complete meal, grill skinless/boneless chicken breast. Chop the white meat and add to the ingredients in the Roll-Up—or substitute spiced steamed ground beef for the chicken.

Cheese-Salsa Squares

8 oz. Cheddar Cheese, shredded
8 oz. Monterey Jack Cheese, shredded
3 eggs
6 oz. Screamin' Mimi's Sweet Hot or Sweet Hotter Salsa
What To Do:
Mix all ingredients and pour into a greased square pan. Bake at 350 degrees until the mixture is golden brown. Cut into squares and serve hot or cold with additional salsa.

Vegetable Dip

8 oz. Cream cheese
2/3 cup Screamin' Mimi's Sweet Hot or Sweet Hotter Salsa.
3 Tbsp. minced onion
1/2 tsp. Chili Powder
1/8 tsp. Pepper
‡ tsp. Chopped "wet" Garlic
What To Do:
Mix all ingredients together and serve with vegetables or chips. This dip can also be used over steamed or grilled veggies, and served warmed.

Beer Cheese Plus

1 lb. Breakfast Sausage
1 18 oz. jar of Screamin' Mimi's Sweet Hot or Sweet Hotter Salsa
1 8 oz. container Beer Cheese
What To Do:
Brown and drain sausage, crumble. Combine and mix well with Salsa and Beer Cheese. Serve warm with Screamin' Mimi's Blue Indian Corn, Red Indian Corn or Garbanzo chips.

Vegetable Bars

1 can Crescent rolls
1 8 oz. Cream cheese
1 cup Mayonnaise
1 pkg. Ranch dressing mix.
æ cup each of Broccoli, Cauliflower, Carrots and Celery oz. pkg. Shredded Cheddar Cheese
What To Do:
Roll crescent rolls out on a cookie sheet. Bake at 450 degrees for 5 minutes. Cool. Soften cream cheese and mix with mayo and dressing mix. Spread over crescent roll crust. Shred vegetables and sprinkle over cheese mixture. Next, sprinkle cheddar cheese over entire surface and top with Screamin' Mimi's Sweet Hot or Sweet Hotter Salsa. Serve additional salsa on the side giving guests choices of Sweet Hot or Sweet Hotter, to taste.
