Preheat the oven to 350 degrees. Make a cut down the center length of the tenderloin, a smidge more than halfway. In the opening, dollop 4-5 healthy spoonfuls of Screaming Mimi’s salsa. Reshape and toothpick or tie several places along the cut. Brush the top of the tenderloin with more salsa, to your heart’s content. Unless you possess Mimi’s uncanny ability to sense when a dish has reached perfection, set a timer for 40-45 minutes. You can also check for an internal temperature of 170 to know it’s done. Remove from oven and let stand 3-5 minutes, while everybody in smelling distance comes running. Slice into slices about an inch thick and serve.
- 1.25 lb lean ground beef or ground turkey
- 6-8 saltine crackers
- 1 egg
- 8 oz Screamin Mimi’s Sweet Hotter Salsa
- Garlic salt and pepper (to taste)
Preheat oven to 350. Crumble whatever crackers you have on hand – 6 to 8, whatever looks about right. Mimi prefers saltines. Add all of the ingredients to a mixing bowl and combine well. Mold neatly into a meatloaf and place in a greased pan. Generously brush top of loaf with remaining salsa and bake until done, about 1 hour.

- 1 can of sliced or chopped black olives

Simply toss the cream cheese, can of chilies, black olives, green onion, pimiento, and meat (if you like) into a bowl and mix well. Spread the mixture over large flour tortillas. Roll and wrap the tortillas in plastic wrap. Refrigerate for 2-3 hours. When you’re ready to serve, remove the plastic and slice rolls in inch-wide sections. Serve cold, topped with the salsa heat of your choosing.

- 8 oz container beer cheese
Cook up the sausage, crumbling as you go. Drain any excess liquid when you’re done. Add it to a bowl with the salsa and the beer cheese. Mix well. Serve with chips. Or slather on some toast.
