Sweet and Spicy Pork Tenderloin
Ingredients
- Lean pork tenderloin, about 1-1.5 lbs
- Screamin’ Mimi’s Sweet Hot or Sweet Hotter Salsa
- Salt and pepper
Instructions
Preheat the oven to 350 degrees. Make a cut down the center length of the tenderloin, a smidge more than halfway. In the opening, dollop 4-5 healthy spoonfuls of Screaming Mimi’s salsa. Reshape and toothpick or tie several places along the cut. Brush the top of the tenderloin with more salsa, to your heart’s content. Unless you possess Mimi’s uncanny ability to sense when a dish has reached perfection, set a timer for 40-45 minutes. You can also check for an internal temperature of 170 to know it’s done. Remove from oven and let stand 3-5 minutes, while everybody in smelling distance comes running. Slice into slices about an inch thick and serve.
